The food scientists have shifted their focus to texture of food items and more studies are currently coming out with texture as a focus point.
Studies have shown that the way in which food is represented will have an impact on how people see it. In short, tweaking the texture could make the food look healthier than it really is.
“The building blocks of the eating experience are flavor and texture,” said Tesi Wei Lim, who runs the Somerville, Massachusetts based restaurant Journeyman.
Expect more such studies in the future as shifting the focus to texture can give out many such theories.
