This fungus could be the new super food

Koji, a fungus which has been used in Chinese and other Eastern Asia cuisines could be the new super food. The fungus which is used for Fermentation of Soy beans and rice is proven to increase the absorption of nutrients into the body.

Apart from this, using Koji as a fermentation agent allows to impart delicious and new flavors to the dishes according to studies. This along with a string of other uses has made Koji a rising name in the food world and in the near future, it could be a worldwide phenomenon.
