Coffee and Potato might sound like the weirdest combination out there but now, it’s backed up by science. Dr. Sebastian Ahnert, a Cambridge physicist specializing in biochemical networks has mapped out a web of flavor perception and how ingredients interact.
He compiled the data from more than 50,000 online recipes and the data shows how combining certain food items could give your taste buds a heavenly experience.
One such combination was potatoes and coffee.
“Coffee and potato share a lot of compounds, so I made mashed potato with milky coffee. It was horrible. But I’ve had a dish in Paris with coffee and potato that worked. So, the execution is a big part [of it], and that is where chefs can really help.” He said.
