Recipe for the Day: Cornell Chicken

While there are many Chicken recipes available out there, not many would’ve created a unique identity that Cornell Chicken has managed to create. The recipe, which was created by Dr. Robert C. Baker in the Cornell University in New York, went on to become a national phenomenon due to its standout taste.

The original intention of the recipe was to grill small and young chickens so that the local farms could sell more chicken, but right now, it has turned into a delicacy.  Now that we know the story behind the Cornell Chicken, here is how you could make the recipe. The ingredients you are going to need for this are:

  • 1 Cup Vegetable Oil
  • 2 Cup Cider Vinegar
  • 1 Egg
  • 3 Tablespoons salt
  • 1 tablespoon poultry seasoning
  • 1/2 tablespoon ground black pepper
  • 1 Broiler-fryer chicken (3 pounds) cut in half.

Now, to make the Cornell Chicken, you need to follow the instructions.

  • In a blender, place the vinegar, oil, salt, egg, poultry seasoning, and black pepper. Cover this and blend till it is smooth.
  • Pour this blended mixture into a resealable plastic bag. Add the chicken to the bag and marinade.
  • After squeezing out the air, seal the bag and marinate it in the refrigerator for around four hours.
  • Once taken out, place the chicken to a plate lined with paper towels.
  • Make the chicken dry with paper towels while reserving the marinade mixture.
  • Now, preheat the grill with medium heat and lightly oil the grate.
  • Grill the chicken with the skin-side down. Do this for two minutes and brush the marinade mixture.
  • Grill the chicken by brushing it with glaze until it is well-browned.
  • Take out and serve.
