Cooking is a great way of getting rid of the Monday Blues. Some delicious food always helps to get the mood up and running, and this week; we are going to write down an easy Burger recipe which could be cooked under half an hour.

And unlike the ordinary Burgers out there, this one stands out for its rich variety which you will enjoy from the first bite itself. So the ingredients that you will need to make the Hawaiian BBQ Salmon Burgers are:

  • 1/2 cup of BBQ Sauce
  •  2 tablespoons pineapple juice
  • 2 tablespoons lime juice
  • pinch of cayenne
  • 2 tablespoons fresh cilantro
  • 1/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 pound fresh raw salmon
  • 1/3 cup Panko breadcrumbs
  • 2 tablespoons freshly grated parmesan cheese
  • 1 tablespoon coconut oil
  • 4 slices Swiss cheese
  • pickled jalapenos
  • 4 king Hawaiian hamburger buns or whole wheat buns, toasted
  • 1 avocado, sliced or mashed
  • Lettuce
  • 2 tablespoon coconut oil
  • 4 large pineapple rings
  • 2 tablespoon toasted coconut

The first step would be to get the ingredients up and running. For that neatly remove the skin of the Salmon and chop Cilantro. After you have done this, take a small bowl and combine BBQ Sauce, lime juice, cilantro, salt, pepper and pineapple juice in it. Mix this well and set is aside for some time.

In another bowl, take salmon and ground it using a processor. Add panko bread crumbs to the grounded salmon and then add parmesan and 2 table spoons of BBQ sauce that was prepared earlier. Make four equally sized burgers from the mixture and heat in a skillet. Cook until they are golden on both sides and before taking them out, you can add Swiss Cheese and Jalapenos as well.

Take another skillet and heat two tablespoons of coconut oil. Place the pineapple slices on this pan and cook both sides of the slice.

Now comes the assembling part. First, place a piece of lettuce on the bottom of the bun, then pace the burger, sliced avocado, ring of pineapple and top it off with the BBQ sauce.
