It is a good source of Vitamin C and Vitamin B6 as well. As our body does not process raw starch properly, we usually cook potato before eating rather than going with the raw one.
When baked, there is a reduction in the amount of Vitamin C and Vitamin B6 of the potato but the change is negligible.
